Origins
Founded in 2021 by Lean Gentini, the world’s first certified Meat Sommelier, IMeatSA (International Meat Sommelier Association) was born with a clear mission: to unite meat experts around the world—from breeders and farmers to butchers, chefs, and educators—under one shared passion and purpose.
IMeatSA’s vision is to honor the craft behind every piece of meat while promoting awareness, education, and sustainable sourcing practices that protect both tradition and the future of the industry.



Achievements
Since its foundation, IMeatSA has worked tirelessly to build bridges between cultures, institutions, and professionals within the global meat community.
Among its proudest achievements are two landmark international collaboration agreements that brought together some of the world’s most respected meat academies:

2023: IMeatSA facilitated the first-ever partnership between the Japan Federal Meat Academy and the Argentine Meat Sommelier School (ICOCA), signed at the Argentine Embassy in Tokyo. This agreement established a formal framework for academic and cultural exchange between Japan and Argentina—two countries deeply rooted in meat tradition.

2025: A second major milestone was achieved when IMeatSA helped connect Munster Technological University (MTU) in Ireland with the University of Buenos Aires where ICOCA held the Meat School. This collaboration strengthened international bonds and created new opportunities for cross-continental learning and innovation in sustainable butchery and gastronomy.
These partnerships are only the beginning. IMeatSA continues to expand its network, striving toward the dream of uniting all meat experts under one global mission—to share knowledge, elevate standards, and celebrate the beauty of meat culture.
